Sunday, Lovely Sunday

And so here it is - the last day of my week off, and it's rapidly drawing to a close as I'm hoping to be tucked up in bed by 9pm, so I'd best get going with what I've been eating hadn't I?

I woke up early once more, just after 8am today, but stayed nice and cosy in bed for a wee bit longer - well, a lot bit longer really as it was more like 11am when we finally dragged ourselves downstairs, and that was mostly due to me being hungry (for a change). As it was quite close to lunch, I went more brunchy than breakfasty.

Sausages, eggs, chips and a mix of mushrooms and tomatoes. A typical lazy Sunday brunch really, and as I was talking about yesterday/this morning, one of the reasons I find it so easy to stay on plan at weekends, the time to cook and eat like this! After eating that little lot, it was time to peruse good old Facebook and TOK had shared a picture of a rather fabulous IT Crowd t-shirt, well that was it, onto Netflix we went and the IT Crowd was cued up as our viewing for the day. And I do mean the day as we are still watching it :)

With a blog out of the way, I could concentrate on texting TOK and playing Candy Crush, before getting hungry once more. I wasn't sure what I fancied and so started with just a big pile of fruit, slowly adding other bits and bobs to make it more meal like and less snackish.

Apologies for the awful photo! The fruit salad was a couple of bananas, apple, kiwi, strawberries and grapes, topped with a vanilla yogurt, and as I hadn't had any for ages I went for some Crispy Fries too :) Our Aldi didn't have any chocolate orange Benefit bars either - how very dare they - and so I've had to resort to the summer fruit flavour :( They're not that bad, but they're not chocolatey either.

The day then proceeded in a lovely, lazy way....with lots of chuckles on the tellybox, lots of texting and window shopping with TOK and plenty of time with Hague. Exactly what I love about Sunday's. I also found a lovely old wardrobe for sale on Facebook for the princely sum of £10 and now have aspirations of a beautiful dressing room filled with vintage furniture. The reality will probably be that it will replace the falling apart flat pack we have in the second bedroom but a girl can dream....

We're picking up the wardrobe tomorrow, so there was no need to get dressed, or anything strenuous like that, and even though I fancied something different for dinner, I didn't want it to be much effort, and my mind was turning towards that old favourite of cheesey pasta, but as I had mac n cheese yesterday, I didn't want to overload on pasta and cheese and so I thought I'd have a bit of an experiment - and today's worked :)

Oven baked risotto, which was bloody handsome, even if I do say so myself. Delicious, full of flavour and easy peasy. Can't beat that can you?

Oven Baked Risotto
a sweet potato
a courgette
half an onion
clove of  garlic
cherry tomatoes
150g risotto/arborio/paella/that sort of thing rice
350ml vegetable stock (made with a stock pot)
lump of frozen spinach
dried thyme
4 Laughing Cow light blue cheese triangles

Okay, once again I employed my tried and tested method of lobbing it all in. The sweet potato, courgette, onion and garlic were chopped and roasted in an oven proof dish for 15 minutes, and then I added in the stock, spinach (which I'd put into the stock to defrost a bit), thyme and seasoning and put it in the oven for 20 minutes - then I just checked to see if the rice was cooked, it might need a bit longer, or a bit more stock. Then I stirred in the triangles. That was it :) So minimal effort and about 30 minutes and it was done! I followed it up with another of my Fudgey Muller pots, which I had to ensure was empty with my finger as they're just that tasty. I think I may have another addiction! 

Seeing as it's an early shift tomorrow, I'm just about going to have time to get a quick bath and head to bed before my week off and my weekend are over. Weigh in looks a lot closer from here! Eek!
