Square Eyes

Today has been a bit of an odd day, food wise anyway, in all other ways it's been a pretty standard Sunday. Relaxing, nice hot bath and plenty of films.

For once, I actually had breakfast within an hour of getting up - bit of a shock to the system, although I did manage to have a huge cuppa first.

I know it's a bit eclectic, but I really didn't know what to have - which has been a bit of a theme today by the way - so I just sort of started with the poached eggs and went from there, adding in some of the Linda McCartney sausages Asda sent us instead of Quorn ones, and a mix of roasted veggies (sweet potato, pepper, tomato and spinach). The sausages were okay, but not really worth the 2 syns each! We're stuck with two boxes now though :(

After this afternoon's footy, which was rather bloody brilliant by the way, as West Ham won away at Newcastle and are now 6th in the league....Come On You Irons.. :), ahem, sorry, after the football I felt peckish and so had a bit of a snack.

Last night's Quorn roast with some gherkins, super quick and rather yummy as the Quorn was still nice and moist even after being in the fridge overnight - don't know what they've done to improve it, but it's delish now.

Even though I slept pretty well last night, I was shattered by this afternoon and so headed up for a nap, which I followed up with a lovely hot bath. Which probably wasn't the cleverest thing to do when I was tired....anyway, I made it back downstairs though, and eventually (at 10.30 or so), I finally decided what I wanted for dinner - problem was, that what I wanted for dinner was a veggie lasagne and I really couldn't be bothered to either prepare it or wait for it to cook, so I settled for a random asian type thing :)

It consisted of courgettes, peppers and mushrooms cooked in the Wok Fry Light and with a tablespoon of chilli and ginger sauce, with Quorn sticky fillets and some sweet chilli SuperNoodles. It was rather nice, and easy too, which is always a bonus. I needed something sweet and so followed it up with some pineapple. Yum.

As it's now 1am, I reckon I'm probably done with food for today - although I might treat myself to a hot chocolate later as it's been a while!

    1. I'm afraid they're not the red onion ones - just the veggie ones, sent my Asda as a substitution for Quorn ones. Syns on EE and Green are usually the same anyway :) xx
