After being quite strangely productive yesterday today has been way, way more relaxed! I actually got a decent night's kip and woke up reasonably bright eyed and busy tailed at 8am. I really didn't know what to have for breakfast, and so didn't get around to eating until around 10, and decided on something simple but filling (for a change eh?)
I am getting quite partial to having spinach with my breakfast, it all helps to push me towards my third superfree anyway.
I then applied myself whole-heartedly to watching lots of Come Dine With Me, whilst the animals relaxed.....
They're not allowed on the sofa when Hague is here, so when he's away all hell breaks loose and all three of us snuggle up on the sofa - bliss :)
As I have a friend coming round this evening, I had to actually do some housework today (I know! Shocking!), and so afterwards, once I'd showered and watched some more CDWM to get over the shock my mind turned towards a late lunch. Once again I really didn't know what I fancied, but after several minutes staring aimlessy into the fridge inspiration (sort of) finally struck and I decided to attempt Spanakopita, which is spinach and feta parcels for those of you not completely fluent in Greek ;)
They couldn't have been easier, two HeA's worth of feta cheese (100g) and fresh spinach rolled up in a sheet of the good old filo pastry again, in the oven for 8 minutes and done! I should probably have used a bit less filling, and that way they would have been more wrapped - but I don't do restraint when it comes to feta!
Not long after "lunch" (which I ate at 4.30), my friend arrived and we've had a lovely evening chatting away, putting the world to rights and half watching Harry Potter, however he's now left and I know I'll need a little something to tide me over until morning, and so I figured a small bowl of veggies and pasta would fill me up nicely.
Job certainly done, and all healthy extras duly eaten and accounted for :) Tomorrow heralds some body magic as I'm leafleting for Claire, I just hope it stays dry!!
A - 2 x 50g of feta cheese
B - 30g of stilton
milk in 3 cups of tea 3
3 quorn sausages 3
2 Shape yogurts 1
Hopefully I'll have a bit more of an idea of what I fancy to eat tomorrow rather than just throw something together as I've been all uninspired!
