Extreme Willpower - Parentals Edition!

Today has been a very busy day! I was out of the day pretty much as soon as I woke up as I had to go and pick Hague up from the station (Yay!) I had to stop on the way though, as he'd brought JadeyCat home with him, and so we needed a new litter box for her. Apparently she had the time of her life on the train, out of her carrier and sitting quite happily next to Hague watching the world go by :)

Hopefully she'll settle right in with the rest of the menagerie, but for now she's safely on her own upstairs, to get her used to us and the house before all hell breaks loose when she's introduced to Little Miss Flumpy!

Anyway, you're reading this for my food rather than the tales of the ever increasing menagerie of the Mitchell/Hague household so I shall swiftly get onto the subject of brunch! As I rushed straight out this morning, but the time I'd got home I was starving, so I wanted something to fill me up. So went for a huge plate of potato wedges, beans, eggs and sausages.

Now after that huge plate of syn free food, you'd have thought I would have been stuffed for hours wouldn't you? After an hour or so we were heading to The Parentals as lots of family were going to be there, and it's rude not to be sociable now and again....usually on these occasions my Mum will put on a bit of a buffet or dinner, however, this time there were so many people coming along that my Mum had a local firm provide a buffet.....Mmmmm buffet, with lovely stuffed white bridge rolls, fresh sandwiches, coleslaw, potato salad, vol-a-vonts, you name it, it was there. Desserts were a baked vanilla cheesecake and a gorgeous looking carrot cake. As soon as I saw it, I was hungry. I kept going over and admiring the desserts, my willpower straining at the edges. It was like a had a little angel on one shoulder and a devil on the other. One encouraging me to behave, to remind me how much I wanted to lose weight, the other telling me that one day wouldn't hurt, that a couple of sandwiches and a little bit of cake would be just fine...

I won't lie, it was SO hard, I really adore carrot cake and baked cheesecake, but I managed to resist - I have no idea how, but I did it. They should hand out medals for willpower like that!

When we got in, I needed to eat so did myself a nice cheesey lasagne as I'd not had any healthy extras today.

I chopped up some mushrooms, courgettes, asparagus and spinach and fried them all off in some frylight with a little bit of rosemary. When everything was cooked I mixed in a tub of LowLow and then layered the mixture with lasagne sheets. I then topped it off with some syn free white sauce - a beaten egg, mixed with fat free yogurt and some nutmeg. 30g of grated cheese on top, 30 mins in the oven and voila! Lasagne
with a lovely side salad, perfect to fill me up before I have to head for a bath and bed as it's earlies tomorrow :(

My blog might be a bit here and there over this coming week as for the first time since I've returned to work I'm working a full rostered week. I've been working 8 hour shifts, but from tomorrow onwards my shifts will include the 12 hour shifts I've so far been missing. I have to work 3 of them this week, and I know I'll struggle, I'll be tired and grumpy and eating similar things most days, so I'll apologise now, as my blogs may be quite samey, and not as regular as normal! Hopefully the long shifts won't kill me and I'll be back to normal for the weekend!
