After having quite a few syns yesterday (42 instead of the projected 50), I was back on plan today. We had a bit of a lie in and so breakfast was more like brunch (for a change lol). As we do our shopping on a Friday the fridge was full to bursting with lots of lovely fresh food and so I decided on a mushroom, spinach and stilton omelette, which was gorgeous!
To be honest, omelettes are a big favourite of mine, they are so quick to make, very versatile and very filling, add to that the fact that you can have them hot or cold and they're pretty much perfect SW food!
Today has been a day of doing those niggly little jobs that need doing but always get put off, including bathing the dog, so no culinary frontiers were going to be crossed today. I wasn't sure what to have for dinner but Hague (my gorgeous boyfriend) was cooking himself a stir fry, and as he was eating it my little crave buds woke up and so I had a SW friendly version.
It was pretty simple too, quite basic, starting off with ginger, garlic and spring onions and then frying off the chicken style pieces (Asda, so not free, but only 1 syn for half the pack). The we just threw in various veggies, broccoli, cauliflower, pepper, mushrooms, peas and sweetcorn. To give it a bit of flavour I added 2 tablespoons of Asda sweet chilli sauce (1 syn), some chinese spice and soy sauce, then stirred the lot into some egg noodles. So filling and tasty, and something I probably wouldn't have had if Hague hadn't have fancied a chinese himself!
Dessert was a fruit salad, with pineapple, strawberries, grapes and apple, if that little lot doesn't flush out last night's beer I don't know what will! Topped with some fat free natural yogurt and a tbsp of honey (2 1/2 syns) it certainly felt like a very decadent dessert, rather than a low syn alternative.
I'm now rather stuffed, and I still have to squeeze a HeA in at some point, I'm guessing it will be some laughing cow triangles as a bit of a snack later if we wake up to watch the Khan fight in the early hours! So I've had a very filling day, and minimal syns, which should help to cancel out some of yesterday's beery delicious syns :)
